Strawberry Vanilla Whoopie Pies

A great recipe to try with the kids this weekend. Making Whoopie Pies is one of my kids favorite baking activities.

3 eggs
2 cups sugar
1 cup shortening
1 & 1/4 cups soured milk
2 tsp. baking soda
4 c. flour
3 tsp. baking powder
1 tsp. vanilla

COOKIE PART: Cream sugar, shortening and eggs. Add vanilla. Sift together flour and baking powder and add to the creamed mixture alternately with the milk, bginning and ending with the dry ingredients. Drop by spoonfulls on greased cookie sheets. Bake at 350 degrees for about 15 minutes or until cookies spring back when touched with the finger. Let cool before filling.

VANILLA WHOOPIE PIE FILLING
6 tablespoons marshmallow fluff
4 tablespoons vanilla extract
4 tablespoons flour
4 tablespoons milk
4 cups icing sugar
1 & 1/2 cups shortening
Add all ingredients in a bowl and beat until smooth. Then place scoop of filling between two of the shells and enjoy!
Here's my trick for turning the vanilla filling to strawberry filling. Fresh or frozen strawberries will make the icing too runny so I use 1 cup FREEZE DRIED STRAWBERIES that I put through the food processor and pulse them through the icing sugar. Reduce the vanilla extract to 1 tablespoon and prepare frosting as directed. Nobody can figure out how the icing has such a strong natural strawberry flavour but that’s my trick.
